Ollie's Kimchi is a live, vegan kimchi based on a classic recipe with a few tweaks here and there.
It's made using ingredients that would be familiar in a Korean kitchen, and gets over a month of fermentation time before packaging.
As it's vegan, Ollie's Kimchi uses soy sauce and miso to get the savoury flavours that are normally given by using a fish-based product of some sort. In traditional kimchi this can be anything from fish sauce & fermented fish pastes through to oysters. Instead, we use a very simple, traditional, fermented soy sauce and a dark red miso that gives it depth and roundness.
Ollie's Kimchi is made in East London, but can be delivered to any part of the UK.
Napa cabbage, daikon, shallot, carrot, spring onion, ginger, fermented chilli flakes, soy sauce (soybeans, wheat, salt, sugar), garlic, miso (barley miso (barley, soybeans, salt), rice miso (soybeans, rice, salt), glutenous starch syrup, ethanol, flavourings), glutenous rice flour.
